Recipe: Sushi Bowls

Finishing exams has already taken a toll on my sanity levels. To fill my time I spent a lazy afternoon with my American friend concocting these simple vegan sushi bowls with some sweet potato dice.

You will need:

Sushi bowls

  • 150g Long grain brown rice 
  • 1/2 pack mushrooms
  • 1.5 avocados
  • 2 bell peppers
  • Tamari soy sauce

Sweet potato dice

  • 2 sweet potatoes
  • Olive oil
  • Paprika
  • Cumin
  • Hot chilli powder
  • Cinnamon

This recipe is designed for two people.

1. Boil the long grain rice for around 25 minutes. Boiling a kettle first means that it takes slightly less time, but do what you will. I’m an impatient person.

2. Dice your sweet potatoes and cover them in the oil. Be generous with the cumin, paprika and hot chilli powder covering and then add a little cinnamon. It sounds weird but it’s one of my housemates’ mum’s recipes and is so good. Make sure the potatoes are covered, then roast at 200 degrees for 20 minutes.

3. If you don’t like raw  mushrooms, as my American helper doesn’t, chop and fry them and allow them to cool.

4. Once the rice is done, portion it up and add your chopped avocado and pepper, as well as the mushrooms. Drizzle with the tamari sauce.

All finished! I enjoyed mine with some Turkish Apple tea and a nice chat.
